A Message from the Manager
It’s hard to believe that in just a few weeks summer break will be coming to an end. We’re getting ready to say goodbye to staff members that are going off to college, while welcoming some new faces to the team. The new co-op crew is one of many changes you might notice this month. We’re also continuing to build on the vision that our remodel inspired, creating new recipes for our daily lunch specials, expanding our baked goods to include vegan and gluten- free options, and making more and more space for local produce as harvest season approaches.
The co-op remains dedicated to supporting local farmers, sourcing as many things locally as possible. Right now we have Oz Farm red and green butter lettuce, spring mix and kale. Nature’s Tune Farm brought us some sweet, delicious tomatoes last week along with beautiful heads of lil’ gem lettuce and gigantic bunches of chard.
Lastly, I’d be remiss if I didn’t mention how sad it is to see Outback Garden & Feed closing. They have been a big part of our community for years and they will be greatly missed. In the coming weeks I will be looking into filling some of the void that their closing will leave. If you have a favorite product that you bought regularly at Outback that you would like to see the co- op carry, please let me know.

Hello to all our co-op members. I hope you are enjoying your summer. And I hope that your co-op is continuing to meet your needs as a one stop grocery and prepared foods market. I am so pleased with our new layout and the way it makes the store feel. I also find new and interesting items each time I shop. When I need something special I ask Natalie and she can usually get things in within days. The kitchen staff works hard to make yummy food and Natalie has been giving them recipes for new and delicious vegan choices. Please tell your friends about our co-op and invite them to become a member. We become stronger when we increase our buying power. The way to lower prices is to increase volume. If you are planning a gathering or having an event you can special order from your co-op.

Recipe for Khichari
( simple eating, lowest on the food chain, easiest on the digestive system)

BASE
- 1 cup rice and ⅔ cup smallest beans mung,lentils,dal
- 5 cups water
Bring rice and beans to boil. Cover and reduce heat simmer until water is absorbed. Stir occasionally add water if necessary.
*Optional: Top with chopped veggies and allow them to steam.
SPICES
2 tabs ghee or oil
pinch hing
2 tbs minced ginger
1 1/2 tsp cumin seeds
¾ tsp black mustard seeds
¼ tsp ground fenugreek
1 tsp turmeric
salt or liquid seasoning to taste
*optional sugar, chopped fresh cilantro.
Heat ghee or oil in a skillet add hing, ginger, cumin, mustard seeds, fenugreek. Sauté until seeds dance then add to kitchari. Stir in turmeric, salt, pinch of sugar to taste. Garnish with cilantro.
